Being back in the kitchen has made me so happy! There is nothing like creating a great meal, tasting it - and saying WOW! I made this? I don't care how corny it sounds, but for me, the best meals are when I surprise myself. Not to mention the confidence boost from family and friends on Facebook and Instagram. Someone, we mention no name here. But one of my sisters suggested I take requests then cook or blog about it. So this weeks challenge is to make a spaghetti squash dish.
